There are few things lovelier in fast food land than taking your first bite into a juicy BigMac (®) from McDonalds (®) . But what really makes this hamburger special is that lovely sauce that comes oozing out of the sides and dribbles enticingly down your chin. For over 50 years McDonalds
(®) have guarded the secret of that “special sauce”, described by some as the love child of Mary Rose Sauce and Mayonnaise.
In 2018 McDonalds (®) finally started selling Big Mac Sauce in bottles to the general public. This finally gave us the chance to see what really goes into that top secret recipe. And the ingredients are indeed mind-bogglingly complicated.
The ingredients of bottled Big Mac Sauce
Soybean Oil (Antioxidant (330)), Water, Relish [ Pickles, High Fructose Corn Syrup, Sugar, Distilled Vinegar, Preservative (202), Thickener (415), Flavourings], Mustard [Water, Distilled Vinegar, Mustard Seed, Salt, Sugar, Colours (150d, 100), Spice], Salted Egg Yolks, Distilled Vinegar, Onion, Thickeners (1442, 415, 405), Spices, Sugar, Salt, Hydrolysed Protein (Corn Gluten, Soy, Wheat Gluten), Preservative (211), Colours (160c, 150d, 100), Emulsifier (433), Garlic, Antioxidant (385).
Unfortunately most of us don’t keep industrial sized bottles of food additives, preservatives and colourants in our kitchens so it is unlikely we will ever be able to make the genuine Big Mac sauce. But don’t worry because we have a taste-a-like which is quick and easy to make and you might already have most of the ingredients in your kitchen.
Big Mac (®) Sauce Copycat
1 cup (300g) mayonnaise
1 tbs. gherkin relish
2 tsp white vinegar
Pinch of white pepper
2 tsp mild mustard
1 ½ tsp onion powder
1 ½ tsp garlic powder
½ tsp sweet smoked paprika (pimenton)
For the Big Mac sauce, combine all the ingredients in a bowl, season with salt and chill until ready to use.
